RECIPE OF THE MONTH - RASPBERRY DARK CHOCOLATE TRUFFLES

*adapted from Amy’s Healthy Baking A sweet, satisfying treat that’s incredibly easy to make and healthy for your body and soul. The creamy, chocolaty texture of the outside melts in our mouth until a fresh burst of tart raspberry center satisfies your senses. Sit back and enjoy with friends or a loved one. Share the love!

Ingredients:
1 cup unsweetened cocoa powder (or carob)
½ cup unsweetened applesauce
3 tbsp of honey (or maple syrup)
¼ tsp vanilla extract
16 small raspberries; rinsed + dried

Instructions:
1. In a medium bowl, mix the cocoa powder, applesauce, honey and vanilla extract until smooth.
2. Divide the mixture into 16 pieces. Roll one portion of the mixture into a sphere, flatten slightly and press the raspberry into the center of the mixture.
3. Roll back into a ball around the berry softly.
4. Place on wax paper and refrigerate until ready to serv
